Prepping our food for a two week RV trip to the West Coast

Prepping before an RV trip was crucial for us for two reasons. The obvious one is the limited space you have in an RV fridge and even smaller, the freezer. The second reason was because we wanted to be able to manage our time exploring instead of cooking, this was about adventure for us not relaxing.

We started at Aldi first because that is where we always shop for groceries. If you don’t already shop at Aldi I highly recommend, you can’t beat their prices. Fun fact…they don’t play music in their store. Also, they do not provide you with grocery bags so you will either have to purchase some there or bring reusable ones from home. Last but not least, you do have to pay a quarter to use their buggy as well, but don’t worry if you return your cart in the appropriate spot you get it back. Genius!

Since I am a vegetarian we had to go to another store to grab a few things that I needed too. Aldi does have vegetarian options available, but I prefer the MorningStar brand. We also wanted to go to Publix because we love their bread. Then we headed over to Walmart for sunscreen, charcoal, and anything else we may have forgot. We planned to do all of our grocery shopping in one day and then meal prep the next day so we would’t be rushed doing either.

Import space-saving tip if you are prepping is to prepare your meals and them when you put them in your freezer bag be sure to lay them flat. This will help tremendously in saving space in you tiny RV freezer.

We used the recipe from Pinterest above to make pinwheels also for those long days of traveling. We knew our teenagers would only eat chips for lunch if we let them so we wanted to make sure while we were driving that they had prepared food available. For mine we just used pimento cheese.

We cooked the french toast like normal and then froze them. Then all you had to do was pop them in the toaster when you were ready to eat. This made it so much easier while we were traveling or didn’t want to spend too much time in the morning cooking. We also didn’t want to eat Pop-tarts every morning when we needed to eat quickly or on the go so we made sure to bring Cliff bars for those days.

We did the same thing with these breakfast sandwiches. We toasted the bread and preassembled each one then labeled each one individually. We had several variations: MorningStar sausage, real sausage, some with no cheese, etc. These were definitely a favorite while driving in the mornings.

I bought some canvas totes for all five of us and filled them with everyone’s favorite snacks and candy for traveling. Each bag also consisted of on-the-go breakfast like Cliff bars, individually packaged trail mix, tuna packets with the fork, crackers, slim Jims, Pringles, etc. Anything that we could grab and throw in our back packs for a long day of hiking. Also, make sure you bring an empty gallon zip-lock bag with you for all of your trash while on the trails.

We drove pretty much non-stop from Georgia to New Meixco which was our first destination. We had a simple dinner of hamburgers, corn on the cobb, and baked beans. We pre-seasoned the hamburger meat and them made them into perfect patties and then froze them. This way they would lay flat in the freezer and save time when we got to our site. We just took them out of the freezer while traveling to thaw out.

During our hike through the Narrows in Zion National Park we found a comfy rock to perch on and enjoy our sacked lunch and a view.

For the one night we had at the Grand Canyon we knew it had to be grand! My wife is the incredible cook so I give all the credit to her for these delicious dinners we had on our epic trip. We were going to watch the sunset over the Grand Canyon so we needed something that traveled well in a bag so chicken, bacon, and ranch wraps for them and MorningStar chicken wraps for me.
